Creamy Cucumbers

Creamy cucumbers make for a perfect summer salad, offering a refreshing and light flavor that is sure to satisfy your taste buds. This salad is not only delicious, but it’s also easy to make, making it perfect for any occasion, whether it’s a family gathering or a quick lunch.

This creamy cucumber salad is perfect as a side dish or as a light meal on its own. It’s packed with fresh ingredients and is a great way to cool down on a hot summer day.

This recipe is from a friend of mine that I absolutely love. I think this is the best creamy cucumber recipe I have ever tried. I changed it up a bit to make it more for my family’s liking I hope you like it too.

Ingredients

  • 4 cucumbers
  • 1 white onion (optional)
  • 1 1/2 cups sugar
  • 1 1/2 cups water
  • 1 1/2 cups white vinegar

SAUCE

  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1/2 teaspoon onion salt
  • 1/4 teaspoon garlic powder
  • 1 teaspoon accent
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon dill, dry

Instructions

  1. In a large bowl combine sugar, water and vinegar. Stir for a minute and set aside.
  2. Peel and slice onions (half moon shape) and cucumbers.
  3. Take bowl and make sure the sugar is dissolved in the water and vinegar.
  4. Then add the cucumbers and onions. Put in fridge for 1 to 2 hours.
  5. When cucumbers are done put in a colander and drain off liquid.
  6. While the cucumber and onion are draining take the same bowl to mix the sauce. Combine mayo, sour cream, all the seasonings and dill. Stir to combine.
  7. Add cucumbers and onions stir until they are all coated in sauce. Serve right away or store in the fridge until serving time.
