This creamy cucumber salad is perfect as a side dish or as a light meal on its own. It’s packed with fresh ingredients and is a great way to cool down on a hot summer day.
This recipe is from a friend of mine that I absolutely love. I think this is the best creamy cucumber recipe I have ever tried. I changed it up a bit to make it more for my family’s liking I hope you like it too.
Ingredients
- 4 cucumbers
- 1 white onion (optional)
- 1 1/2 cups sugar
- 1 1/2 cups water
- 1 1/2 cups white vinegar
SAUCE
- 1 cup mayonnaise
- 1 cup sour cream
- 1/2 teaspoon onion salt
- 1/4 teaspoon garlic powder
- 1 teaspoon accent
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon dill, dry
Instructions
- In a large bowl combine sugar, water and vinegar. Stir for a minute and set aside.
- Peel and slice onions (half moon shape) and cucumbers.
- Take bowl and make sure the sugar is dissolved in the water and vinegar.
- Then add the cucumbers and onions. Put in fridge for 1 to 2 hours.
- When cucumbers are done put in a colander and drain off liquid.
- While the cucumber and onion are draining take the same bowl to mix the sauce. Combine mayo, sour cream, all the seasonings and dill. Stir to combine.
- Add cucumbers and onions stir until they are all coated in sauce. Serve right away or store in the fridge until serving time.
