Ingredients

  • ½ cup granulated sugar
  • 1 ½ tbsp cornstarch
  • ½ cup water
  • 2 tbsp dry peach jello mix
  • 2-2 ½ cups fresh diced peaches
  • ½ cup granulated sugar
  • 8 ounces of softened cream cheese
  • 8 ounces of thawed cool whip
  • 1 graham cracker crust store-bought or homemade

Instructions

Step 1: Prepare the Peach Filling

  • Combine sugar, cornstarch, and water in a medium saucepan. Stir the mixture over medium heat until it comes to a boil.
  • Once the mixture thickens and becomes clear, remove it from the heat and add the dry peach jello. Stir until the jello is fully dissolved.
  • Gently fold the diced peaches, ensuring they are coated in the jello mixture. The vibrant colors and flavors of the peaches will infuse the pie with their essence.

Step 2: Cream Cheese Layer

  • Mix the softened cream cheese and ½ cup of sugar in a separate bowl until smooth and creamy.
  • Gently fold in the thawed cool whip, creating a velvety and airy texture that complements the freshness of the peaches.

Step 3: Assemble the Pie

  • Take the graham cracker crust and evenly spread the cream cheese mixture over the bottom. Use a spatula to ensure a smooth and even layer.
  • Next, carefully spoon the peach filling over the cream cheese layer, spreading it evenly.

Step 4: Chill and Serve

  • Cover the pie with plastic wrap and refrigerate it for at least 2-3 hours or until it is thoroughly chilled. The cooling process allows the flavors to meld together, resulting in a heavenly dessert.
  • Once properly chilled, slice the pie into generous portions and serve to eager family and friends. The combination of creamy and fruity goodness will leave everyone craving for more.
