This Cowboy Caviar is a recipe I love to make during the summer because it is so refreshing. Everything is so fresh and flavorful you can't stop eating it. Grab your favorite chips and enjoy!

Ingredients
  

  • 1 14.5oz can black eyed peas rinse and drain
  • 1 (14.5oz) can black beans rinse and drain
  • 1 pound Roma tomatoes around 6
  • 1 ½ cups frozen corn thawed
  • 1 cup green pepper diced
  • 1 large avocado diced
  • 1 medium purple onion diced and rinse with water
  • cup cilantro chopped
  • 1 jalapeno pepper diced small
  • SAUCE
  • ¼ cup + 2 tbsp olive oil
  • 3 tbsp red wine vinegar
  • 2 tbsp fresh lime juice 1 to 2 limes
  • 2 tsp honey
  • 1 ½ tsp garlic minced
  • 1 tsp oregano
  • salt and pepper to taste

Instructions
 

  • In a small bowl add all the ingredients for the sauce, mix and set aside.
  • Open black eyed peas and black beans put in a colander and rinse.
  • Dice onion and put in colander and rinse also.
  • In a large bowl add tomatoes, corn, green pepper, avocado, cilantro and jalapeños.
  • Then add in the beans and onions.
  • Pour sauce on top and mix to combine.
  • Serve with tortilla chips.
  • Serve right away or refrigerate.
