This Cowboy Caviar is a recipe I love to make during the summer because it is so refreshing. Everything is so fresh and flavorful you can’t stop eating it. Grab your favorite chips and enjoy!

 

Here is what you need to make Cowboy Caviar:

Ingredients

  • 1 (14.5oz) can black eyed peas
  • 1 14.5oz) can black beans
  • 1 pound Roma tomatoes, around 6
  • 1 1/2 cups frozen corn, thawed
  • 1 cup green pepper, diced
  • 1 large avocado, diced
  • 1 medium red onion, diced and rinse with water
  • 1/3 cup cilantro, chopped
  • 1 jalapeño, diced
  • SAUCE
  • 1/4 cup+2 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons fresh lime juice, 1 to 2 limes
  • 2 teaspoons honey
  • 1 1/2 teaspoons garlic, minced
  • 1 teaspoon oregano
  • salt and pepper to taste

 

Instructions

In a small bowl add all the ingredients for the sauce, mix and set aside.

Open black eyed peas and black beans put in a colander and rinse. Dice onion and put in colander and rinse also. In a large bowl add tomatoes, corn, green pepper, avocado, cilantro and jalapeños. Then add in the beans and onions. Pour sauce on top and mix to combine. Serve with tortilla chips. Serve right away or refrigerate. You will love this!

Ingredients
  

  • 1 14.5oz can black eyed peas rinse and drain
  • 1 (14.5oz) can black beans rinse and drain
  • 1 pound Roma tomatoes around 6
  • 1 ½ cups frozen corn thawed
  • 1 cup green pepper diced
  • 1 large avocado diced
  • 1 medium purple onion diced and rinse with water
  • cup cilantro chopped
  • 1 jalapeno pepper diced small
  • SAUCE
  • ¼ cup + 2 tbsp olive oil
  • 3 tbsp red wine vinegar
  • 2 tbsp fresh lime juice 1 to 2 limes
  • 2 tsp honey
  • 1 ½ tsp garlic minced
  • 1 tsp oregano
  • salt and pepper to taste

Instructions
