Enchilada casserole is a delicious and easy-to-make Mexican-inspired dish that is perfect for any occasion. Ingredients
- 2 lbs. meat, cooked & shredded (I used chicken)
- 1/2 onion (diced)
- 1 package taco seasoning (I used mild)
- 6 flour tortillas
- 1 (14oz) can enchilada sauce
- 1 (14oz) can tomato sauce
- 2 pounds shredded cheese (I used Colby Jack)
Instructions
First add cooked meat, onion and taco seasoning to a frying pan. Add water according to directions on taco seasoning mix. Cook till everything is combine. Turn off heat and set aside. In a bowl big enough to fit the tortillas mix enchilada sauce and tomato sauce. Then in a sprayed 9×13 baking dish start laying. Dip tortillas in the enchilada sauce and place in the bottom of the baking dish (I used one and a half tortillas for each layer). Then add 1/3 of the meat and one half pound of the cheese. Repeat 2 more times. Then dip and add the last tortillas to the top and add the last 1/2 cheese. If you have leftovers sauce add to the top. In a 350 degree oven cook for 20 to 30 minutes Serve and enjoy.
