- 4 strips of bacon cooked and chopped
- 1 small onion diced
- 1 red bell pepper diced
- 4 cups diced sweet potatoes
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp paprika
- salt and pepper to taste
- 3 green onions diced
Start by boiling the sweet potatoes. Bring a large pot of water to a boil and add a pinch of salt. Add the cubed sweet potatoes and boil for 5 minutes. Drain and set aside.
In a frying pan, cook the bacon until crispy. Remove the bacon from the pan and place it on a plate with some paper towels to drain. Set aside.
In the same pan with the bacon grease, add the diced onion and red bell pepper. Cook until the vegetables are soft and a little translucent.
Add the cumin, garlic powder, and paprika to the pan with the vegetables. Stir and cook until fragrant.
Add the boiled sweet potatoes to the pan and continue frying until the potatoes have some color on them. Fry them until they're cooked to your liking.
Add the chopped bacon back to the pan and turn off the heat.
Finally, sprinkle the chopped green onions over the top of the sweet potato hash.
