Ingredients
  

  • 4 strips of bacon cooked and chopped
  • 1 small onion diced
  • 1 red bell pepper diced
  • 4 cups diced sweet potatoes
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • salt and pepper to taste
  • 3 green onions diced

Instructions
 

  • Start by boiling the sweet potatoes. Bring a large pot of water to a boil and add a pinch of salt. Add the cubed sweet potatoes and boil for 5 minutes. Drain and set aside.
  • In a frying pan, cook the bacon until crispy. Remove the bacon from the pan and place it on a plate with some paper towels to drain. Set aside.
  • In the same pan with the bacon grease, add the diced onion and red bell pepper. Cook until the vegetables are soft and a little translucent.
  • Add the cumin, garlic powder, and paprika to the pan with the vegetables. Stir and cook until fragrant.
  • Add the boiled sweet potatoes to the pan and continue frying until the potatoes have some color on them. Fry them until they're cooked to your liking.
  • Add the chopped bacon back to the pan and turn off the heat.
  • Finally, sprinkle the chopped green onions over the top of the sweet potato hash.
  • Serve immediately and enjoy!
