Ingredients:
- 4 strips bacon, cooked and chopped
- 1 small onion, diced
- 1 red bell pepper, diced
- 4 cups sweet potatoes, cubed
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- salt and pepper to taste
- 3 green onions, chopped
Instructions:
- Start by boiling the sweet potatoes. Bring a large pot of water to a boil and add a pinch of salt. Add the cubed sweet potatoes and boil for 5 minutes. Drain and set aside.
- In a frying pan, cook the bacon until crispy. Remove the bacon from the pan and place it on a plate with some paper towels to drain. Set aside.
- In the same pan with the bacon grease, add the diced onion and red bell pepper. Cook until the vegetables are soft and a little translucent.
- Add the cumin, garlic powder, and paprika to the pan with the vegetables. Stir and cook until fragrant.
- Add the boiled sweet potatoes to the pan and continue frying until the potatoes have some color on them. Fry them until they’re cooked to your liking.
- Add the chopped bacon back to the pan and turn off the heat.
- Finally, sprinkle the chopped green onions over the top of the sweet potato hash.
