There’s something special about family recipes that hold a special place in our hearts. Today, I want to share with you a beloved recipe from my mom’s kitchen—Carrot Potato Casserole. It’s a dish that has been passed down through generations and always brings back cherished memories. Whenever my Uncle Bart would visit, this was the dish he eagerly anticipated. Let’s dive into this comforting and delicious recipe that will surely become a favorite in your own home.

 

Ingredients:

  • 1 pound ground beef
  • 1/2 cup diced onion
  • 2 cups shredded potatoes
  • 2 cups shredded carrots
  • 2 small cans of cream of mushroom soup
  • 2 cups crushed crackers (such as club crackers)
  • 1 cup grated cheese
  • 1/2 cup melted butter

Instructions:

  1. Prepare the Ground Beef: In a frying pan, cook the ground beef and diced onions until the beef is browned and the onions are tender. Once cooked, drain any excess grease.
  2. Assemble the Casserole: Preheat your oven to 350 degrees Fahrenheit. In a baking dish, combine the cooked ground beef and onions with the shredded potatoes, shredded carrots, and cream of mushroom soup. Stir the ingredients together until well combined.
  3. Bake the Casserole: Place the baking dish in the preheated oven and bake for approximately 25 minutes, or until the casserole is bubbling around the edges and the vegetables are tender.
  4. Prepare the Topping: While the casserole is baking, prepare the delicious topping. In a large ziplock bag, combine the crushed crackers, grated cheese, and melted butter. Seal the bag and mix the ingredients together until well-coated.
  5. Add the Topping: Once the casserole has finished baking, carefully remove it from the oven. Sprinkle the cracker and cheese mixture evenly over the top of the casserole.
  6. Finish Baking: Return the casserole to the oven for an additional 5 minutes, or until the cheese is melted and the cracker topping turns a golden brown.
  7. Serve and Enjoy: Remove the casserole from the oven and let it cool slightly before serving.
