Ingredients

  • 4 pounds russet potatoes
  • 1 tablespoon salt
  • 1 1/2 cups ranch dressing
  • 1 1/2 cups sour cream
  • 2 cups grated Colby Jack cheese
  • 5 strips of bacon, cooked and diced

Instructions

Prepare the Potatoes:

Start by washing the potatoes thoroughly. Peel them if desired, or leave the skin on for added texture and flavor. Dice the potatoes into 1-inch cubes, ensuring they are all roughly the same size for even cooking.

Cook the Potatoes:

Place the diced potatoes in a large pan and fill it with enough cold water to cover the potatoes by about 2 inches. Add the salt to the water and potatoes, which will enhance their flavor. Set the pan over high heat and bring the water to a boil. Cook the potatoes for approximately 20 minutes or until they are fork-tender.

Prepare the Remaining Ingredients:

While the potatoes are cooking, it’s time to prepare the other components of this delicious dish. Cook the bacon until crispy, then dice it into small pieces. Grate the cheese, and in a separate bowl, combine the ranch dressing and sour cream, mixing well until smooth and creamy.

Assemble the Cheesy Ranch Potatoes:

Once the potatoes are cooked, drain them and return them to the same pan. Add the cooked bacon, grated cheese, and the ranch dressing and sour cream mixture into the pan with the potatoes. Gently mix everything together, ensuring that the potatoes are evenly coated with the sauce and the other ingredients are distributed throughout.

Bake the Dish:

Preheat your oven to 350 degrees Fahrenheit. Transfer the potato mixture into a 9×13 baking dish, spreading it out evenly. Place the dish in the preheated oven and bake for approximately 30 minutes or until the top becomes slightly browned and bubbly.

Serve and Enjoy:

Once the Cheesy Ranch Potatoes are cooked to perfection, remove them from the oven and let them cool for a few minutes. Serve the dish as a delightful side or even as a standalone meal. The combination of creamy ranch, melted cheese, crispy bacon, and tender potatoes will have everyone coming back for seconds.
