Pudding Graham Cracker Icebox Cake

Today, I want to share with you my daughter Hailey’s all-time preferred dessert recipe: Pudding Graham Cracker Icebox Cake. Not only is this cake incredibly easy to make, but it also never fails to impress any crowd. So, let’s dive into the recipe and make some unforgettable memories in the kitchen!

Here’s what you’ll need for this delightful treat:


  • 1 large package of instant chocolate pudding
  • 1 large package of instant vanilla pudding
  • 6 cups of milk
  • 2 packages of graham crackers
  • 1 8oz container of cool whip
  • 2 bananas


  1. Start by preparing the pudding. In one bowl, combine the chocolate pudding mix with 3 cups of milk. In another bowl, mix the vanilla pudding mix with the remaining 3 cups of milk. Set both bowls of pudding aside.
  2. Once the pudding has been set up, gently fold half of the container of cool whip into each bowl of pudding. Continue folding until the cool whip is thoroughly incorporated, creating a light and fluffy texture.
  3. Now it’s time to assemble the cake. Take a 9 x 13 baking dish or pan and begin by creating the first layer using graham crackers. Place them evenly on the bottom of the dish.
  4. Carefully pour the vanilla pudding mixture over the graham cracker layer, ensuring it is spread evenly. This will be your second layer.
  5. Add another layer of graham crackers on top of the vanilla pudding layer.
  6. Pour the chocolate pudding mixture over the graham cracker layer, distributing it evenly. This will be your third layer.
  7. Once you’ve completed the layers, cover the dish with plastic wrap and refrigerate the cake for a minimum of one hour, or you can leave it overnight to allow the flavors to meld together and the graham crackers to soften slightly.
  8. When you’re ready to serve, add a finishing touch by topping the cake with graham cracker crumbs and sliced bananas. This not only adds a delightful crunch but also a hint of natural sweetness.
  9. Slice the cake into generous portions, serve, and watch as your family and friends devour this delectable dessert.
