This is a recipe my mom would make in the summer when we had lots of veggies from our garden. It was always nice and refreshing on a hot day!
Cottage Cheese Veggie Salad
- 1 24oz container cottage cheese
- 2 medium sized tomatoes
- 2 green onions
- 1 cucumber
- 1 small bunch radishes
- 1/2 teaspoon season salt
- 1/4 teaspoon pepper
Dice all the veggies and add to a bowl. Then add the cottage cheese, season with salt and pepper. Stir to combine. Serve right away or refrigerate until serving time. You can do any veggie combination you would like. This is only one method you could use. Have fun and make it the way you would like it. That is what cooking is all about.
