I received his Macaroni Salad recipe from way back when I was in High School. I took some classes at our local Collage from the best Chef and teacher ever. This was his recipe and I have been making it ever science. It has all the right flavors you love in a macaroni salad.
Ingredients
- 1 (16oz) box elbow macaroni
- 3 green onions (diced)
- 2 celery stocks (diced)
- 1 large tomato (diced)
- 1/2 cup dill pickles (diced)
- 1 small can sliced olives (drained)
- 3/4 cup mild cheddar cheese (diced), you can change the cheese up if you want.
- 3/4 cup mayonnaise
- 3/4 cup Miracle whip
- 1/2 teaspoon accent
- 1 tablespoon pickle juice
- 1 1/2 teaspoon mustard
- 1 tablespoon milk
- salt and pepper
Instructions
- In a large pot bring water to a boil. Then salt water like the sea.
- Cook macaroni according to the directions on the box. Drain macaroni and set aside.
- In a big bowl add green onions, celery, tomato, dill pickles, olives and cheese.
- In another bowl mix mayonnaise, Miracle whip, Accent, pickle juice, mustard, milk and salt and pepper to taste, mix well.
- Add macaroni to the bowl with all the veggies.
- Add sauce a little at a time till the desired consistence is reached.
- Serve right away or store in fridge till serving time. Enjoy.
