Ingredients

  • 1/2 cup chopped dates
  • 1/2 cup raisins
  • 1 1/2 cups boiling water
  • 1 teaspoon baking soda
  • 1 cup sugar
  • 2/3 cup butter
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 1/2 cup chocolate chips
  • 1/2 cup chopped nuts (walnuts work well)

Instructions

In a small pan, bring water to a boil.

Meanwhile, in a bowl, combine the chopped dates, raisins, and baking soda.

Pour the boiling water over the mixture and set it aside to cool.

Preheat your oven to 350 degrees Fahrenheit.

Spray a 9×13-inch cake pan with cooking spray to prevent sticking.

Cream the butter and sugar until light and fluffy in a mixing bowl.

Beat in the eggs and vanilla, ensuring they are well incorporated.

Whisk together the flour, cinnamon, and salt in a separate bowl.

Add the dry ingredient mixture to the creamed butter, sugar, eggs, and vanilla.

Mix until well combined, creating a smooth batter.

Gently fold the cooled date and raisin mixture into the batter until evenly distributed.

Pour the batter into the prepared cake pan, spreading it out evenly.

Combine the brown sugar, chocolate chips, and chopped nuts in a bowl.

Sprinkle this delicious mixture over the cake batter, evenly covering the surface.

Place the cake pan in the oven and bake for approximately 35 to 40 minutes.

To check for doneness, insert a toothpick into the center of the cake; if it comes out clean, the cake is ready.

Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Once the cake has cooled, slice it into squares or rectangles.

Serve the Picnic Cake as a delightful centerpiece for your outdoor gathering.

Pair it with your favorite beverages and enjoy the flavors amidst the beauty of nature.
